
Is it a snack or is it a dessert? You decide!
I do have to confess, for this particular batch – which came out totally delicious, btw – I grabbed Sun Butter Original Sunflower Seed Butter, and it does have sugar as one of the ingredients which I did not notice until I sat down to type up the recipe. I am usually fairly good about making sure that my nut and seed butters are sugar free, palm oil free – basically just the seed or nut, and that is it! And now I am questioning if my other batches have been this delicious. With the added sugar, the answer is – definitely a treat or dessert, not a snack! But these were so moist and rich, I just cannot get over how YUM YUM they were! I will probably make the next batch without sugar just for comparison, but I have to admit, I might have to do these again for a treat. Here is the nut butter that I used this time – Sun Butter Original Sunflower Seed Butter.
In previous batches I have used almond butter and peanut butter, this was the first time with sunflower seed butter. Although, my husband is not a huge fan of peanut butter so if I am in the mood to share, even though I totally love peanut butter, I will use a substitution! I will let you know what he thinks of the sunflower seed butter and see if he picks up on the extra sweetness.
So, I definitely have a bit of homework!
I will come back and update this post with information from my next batch and of course, feedback from my most difficult and honest critic, the husband, lol! Let me know what you think too! There are lots of different ways to do this recipe. You can change the nut or seed butter, you can change the topping, and you do not necessarily have to cover them in chocolate, but why wouldn’t you?!
By the way, these are quicker than quick to make. In a pinch running off to a gathering, I have made them entirely from start to freezer finish in less than 30 minutes. And it is a small number of ingredients so perhaps a fun treat to make on the fly. These days I always try and have Medjool dates on hand and the rest is pretty basic.

Ingredients:
1 cup Organic Medjool dates, pitted
1/4 cup unsweetened cocoa powder
10 ounces walnuts
4 (heaping) tbsp sunflower seed butter
2 tsp ground vanilla bean or vanilla extract
1/2 cup semi-sweet chocolate chips or vegan chocolate chips
Topping Ingredient:
1/2 cup unsweetened shredded coconut (or sprinkles, nuts, etc.)
Instructions:
Put all ingredients except chocolate chips(and any topping) into a food processor and pulse. Note: I usually start with 3 tbsp of the seed or nut butter, and check the consistency before I add the last tablespoon. I like the mixture to be completely ground into a fine – dirt like – mix. And I like it moist because it rolls easier into bite sized balls.
I use my small Stainless Steel Cookie Dough Scoop to form small balls. I get anywhere from 2 – 3 dozen balls depending on how generous or exact I am with the scoop. Place the balls on a baking tray that fits into your fridge and store them there while you melt the chocolate. If you are vegan, use your favorite non-dairy chocolate. I have used both non-dairy and semi-sweet versions, but for the ones pictured, I used semi-sweet chocolate chips. I always melt my chocolate over a double boiler, but you can also melt it on increments in your microwave. Just stir it every 10-20 seconds or so.
Once your chocolate is smooth, you can dip your bites into the bowl. I love a chocolate covered bite – I mean who does not?! So, I dunk them one by one and use a fork to shake off the extra chocolate. You can then roll the chocolate covered bite in chopped nuts, or shredded coconut – or even sprinkles. I always make some plain chocolate and the rest with shredded coconut.
One question?
Are these for sharing, or your own personal stash? Either way, they need to firm up. If you have time and are saving these, then place the bites into the fridge. They will firm up and be totally delicious and will easily keep in the fridge for 24 hour snacking opportunities. If you have to bring them somewhere or are short on time then I recommend throwing them into the freezer for 30 minutes. This will help them to travel better and if they sit out at a party for a bit they will still be good.
If you do intend this to be your own personal stash or you at least want control over the supply, you will have to find a little spot in your fridge where they are not too obvious! They are so easy to gobble two at at time, they tend to not last very long. I hope you enjoy them as much as we do in my house!
