I love it when my daughter starts out her day with this juice. I enjoy drinking this surprisingly sweet juice too. At first, I thought the spinach and green tea would make the juice bitter but the apples and cucumber, and of course (if you choose to add it) a bit of maple syrup or honey help too. You can make the juice without the extra sweetener. First, try without it and see if it will pass the kiddo test. Either way, it is a great natural juice filled with fresh whole plant foods.
As a parent I had previously found it difficult to get vegetables into our pre-school breakfast routine. This juice solves that problem big time! I am so pleased to know that my daughter is getting a great mix of nutrients, and it helps to set her up for a bright day. She knows that she has made an excellent choice, and that helps to continue her on a path of good or at least better decisions throughout the day.
I like making this recipe on Sunday night so it can chill and is perfectly ready for that Monday morning get out of the house rush. I use my favorite Reusable Glass Bottles with Caps, and the juice lasts for a couple of days in the fridge. The glass bottles are easy to grab and go. It just needs a good shake before drinking. Both the bottle and cap can go through the dishwasher, so they are so easy to reuse and have held up nicely over time.
If you are doing a lot of plant based, home cooking, and watching your food waste, I find it helpful to label all my glass jars and containers. I just use a Bistro Chalk Marker. It is so easy to mark the made and use-by dates, ingredients, etc., on all kinds of containers. The markers wash right off so you have a clean jar for your next creation.
Green Juice
Makes 4 servings
4 Organic Granny Smith Apples, washed, cored and chopped (skin on)
½ Organic English Cucumber, washed and chopped
1 ½ cups Fresh Organic Spinach, washed
2 cups brewed green tea, cooled to room temp. My brand favorite is Rishi Matcha Super Green Tea
¼ cup Fresh Mint Leaves, washed
2 tbsp maple syrup (optional, depending on how sweet you want it to be)
Juice from ½ lemon or to taste
I buy only organic, and the most local, unpackaged ingredients that I can find. Organic is vital especially because I am leaving the skins on both the apples and cucumber, but also because I want to support farming practices that are better for the environment. Even if it is a little more expensive, I want to send the message that my food needs to be chemical free. Locally grown helps to cut down on the carbon emissions from transportation and your produce is fresher.
I also pre-chop everything, but I have wondered if I can just throw it all into the blender. If you try that let me know if that works as well. Mix all ingredients in a blender, and blend until all ingredients are well combined. I love my Vitamix A2300 Smart Blender, it does a great job grabbing all ingredients and making delicious and healthy juices, smoothies, dressing, etc., but this juice mixes quite easily so any blender will work. I start it at a low speed and once it begins to mix, I turn it up to the highest speed.
Refrigerate the juices prior to serving. Enjoy the taste, and the superior attitude you will have knowing that you just drank your daily serving of spinach!
