This is one of those recipes where it is totally unnecessary to let people know that it is made with alternative flour and sugars. If they do not know, they will not be able to tell by taste or texture.
I am not sure if it is taste, texture, or the accessibility of plant-based, or should I say planet-first food, which is the biggest challenge for making the switch to eating for the planet. Maybe it is something entirely different. I know that preparing food for a family always takes time and thought. I understand from experience that you can cut that in half by grabbing choices that are familiar. Hopefully, you will love these brownies, and they can become your new “familiar” treat. I would love for you to share your thoughts below about what is(was) hardest for you in terms of transitioning to a diet that is better for the environment.
For me, the longer that I am on this journey, the more I am leaning towards vegan and not just plant-based. I am guessing that might just be somewhat of a natural progression. No judgement either way from me, my motivation is absolutely 100% about making an impact on climate change. Every bit that each of us does helps!
I am not a professional chef or baker – far from it! I struggle just like everyone else in finding good substitutions that I can manage and my family loves. So, here you go! I have found a tried-and-true, easy vegan dessert recipe that is so satisfying!
Ingredients:
1 cup apple sauce
½ cup melted ghee. I used this one – it was really buttery – Livlo Organic Vegan Ghee
½ cup coconut sugar
3 tbsp maple syrup
2 tsp vanilla extract
1/3 cup unsweetened cocoa powder. I love this one, which is vegan – Guittard Cocoa Rouge Cocoa Powder
1 cup brown or white rice flour – I have made these brownies with both types of flour. The brown rice flour is a bit healthier but sometimes I have white rice flour on hand that is screaming to become brownies.
1 tsp baking soda
½ cup chopped walnuts. You can use any chopped nuts or skip them altogether.
½ cup vegan chocolate chips (optional)
Instructions:
Preheat the oven to 350 degrees Fahrenheit. Using a standing mixer, combine all wet ingredients. Gradually add all dry ingredients. Fold in nuts and chocolate chips. Pour batter into a greased (I use coconut oil) 8”X 8” pan. Bake for 25 minutes. Cool and serve.
These keep well in the fridge so try not to eat them all in one sitting.
