Yep, salad for breakfast!
It makes such good sense, and this salad is delicious – and absolutely perfect for breakfast. It is light and fresh, and I love starting my day with spinach! You can substitute the ingredients with whatever fruits and veggies you have in the fridge. Regardless, this recipe is a definite must try!
I know! I know! Salad isn’t the first thing we think of when we are deciding what to have for breakfast!
But, why not?!
This breakfast salad recipe offers you everything that you need to start your day off right. It is filled with nutrients, fiber, and all the colors of the rainbow which means tons of vitamins. And, although salad might be a somewhat uncommon choice in the morning, the nuts help to keep you satiated. The rest is crisp, tangy – light – but totally flavorful.

Strawberry Spinach Breakfast Salad

Ingredients:
2 cups organic baby spinach, washed
1 organic peach, washed, pit removed and sliced
1 organic kiwi, peeled and sliced
1 cup organic strawberries, washed, hulled and sliced
1 cup organic blueberries, washed
¼ cup fresh mint, washed and chopped
¼ cup chopped almond slivers

For the dressing:
¼ cup fresh orange juice
1 tbsp fresh lime juice
1 tsp maple syrup
1 tsp poppy seeds
Mix the salad ingredients in a bowl. Whisk the dressing ingredients and drizzle on salad. Note: I prefer to always buy organic. It is better for the planet’s health and my family’s too! I always wash my fruits and vegetables. You can never be too sure what has touched them prior to their arrival in your home.
